Périgord, a major truffle centre in France, is the home of the Black Diamond, the Périgord truffle, also called Tuber Melanosporum. The truffle hunt with a pig or a truffle dog lasts from December to the end of February. This black truffle sauce from Perigord is also called Sauce Perigueux as during the truffle season Perigueux is one of the towns where truffle markets are held.
