
Is there anything better than an ice cream on a hot summer’s day?? And even more enjoyable if you’ve made it yourself! Pistachio ice cream is a delightful dessert for adults and children alike, with its creamy texture and subtly sweet flavour.
Did you know that most commercial pistachio ice creams do not even contain pistachios..? Instead, ice cream companies use almond paste to imitate the taste and add green food colouring! We are delighted to share a pistachio ice cream recipe with you that is both easy to make and extremely delicious! We use a premium pistachio paste, Sainte Lucie pistachio paste (with 48% pistachios) to simplify the process (as this eliminates the need to roast and blend pistachios), making this a quick pistachio ice cream recipe that is sure to please. Plus, with just a touch of Sainte Lucie orange blossom water you can add a delicate citrus fragrance, for an ice cream with a subtle sweetness.

Ingredients:
- 500ml Whole milk
- 50g Sugar
- 20g Maizena (cornflour)
- 200g Pistachio paste
- Few drops of orange blossom water
- Gavottes wafers
- Mix 100g milk with the Maizena until dissolved and smooth.
- Heat the rest of the milk in a saucepan and add the sugar.
- When it starts to boil, remove from the heat and add the milk and Maizena, then simmer for 5 minutes until it thickens, stirring constantly.
- Remove from heat, pour in a bowl, and let is cool down then add the pistachio paste and orange blossom water and stir.
- Chill overnight or for a few hours until cold.
- Freeze the mixture in your ice cream machine according to the manufacturer’s instructions.
- Serve with gavottes and a few chopped pistachios.
