Madeira sauce or sauce Madère is a savoury French sauce where traditionally, shallots and mushrooms are sautéed in butter before being mixed with Madeira wine, peppercorns, thyme, and bay leaves. The mixture is then reduced to obtain a demi-glace sauce.
