Jesus de Lyon is a coarse-textured, pear-shaped, dry-cured sausage. It takes its name from the fact that it is a specialty of Lyon cuisine originally prepared at the end of the year, with the aim of being ready to be eaten at Christmas to celebrate the birth of Jesus. Best to store wrapped in cloth in a cool, dry place.
