This French creamy garlic soup, also known as “Creme à l’ail,” is a comforting and flavourful dish that combines the rich, mellow taste of garlic with a silky, creamy texture. This is the perfect dish when onions and garlic are in season. Ideal for cooler days or when you need a warming, rustic meal, this soup is surprisingly simple to make yet delivers layers of depth in every spoonful. Ingredients:
- 60g unsalted butter
- Cloves from 2 purple garlic bulbs
- 2 Roscoff onions finely chopped
- 500g potatoes
- 500ml milk
- 500ml chicken or vegetable stocks.
- Melt 30g of butter in a saucepan. Add the garlic cloves and cook slowly for 5 to 7 minutes until slightly golden.
- Add the onions and cook another 2 to 3 minutes then add the potatoes and the rest of the butter. Cook for another 7 to 10 minutes until the onions are transparent. Stir occasionally so the potatoes don’t stick to the pan.
- Pour the milk and stock in and let it simmer for 15 to 20 minutes or until the potatoes are cooked.
- Blend the soup until smooth, season according to taste and serve. Serve with croutons for extra crunch!
