This classic French recipe features a thin, savoury pancake made with buckwheat flour, giving it a rich, nutty flavour while being naturally gluten-free. Perfect for filling with cheese, ham, eggs, mushrooms topped with grated emmental or even smoked salmon, these traditional galettes make a delicious and satisfying meal. Whether you enjoy them simply with butter or filled to your liking, they’re a fantastic way to savour Shrove Tuesday the French way!
Ingredients:
- 250g Treblec flour (buckwheat)
- 2tbsp T45 Flour
- Salt and pepper
- 1 egg
- 2 tsp vegetable oil
- 500ml water
Instructions:
- In a mixing bowl, combine all the ingredients in the order above. Gradually add the water while stirring until you get a smooth, fluid batter.
- Let the batter rest for 1 hour. If it thickens too much, add a little water to adjust the consistency.
- Heat a pan over high heat and lightly grease it with (salted) butter. Pour in a small ladleful of batter, swirling it to spread evenly. Cook until golden, then flip and cook the other side.
- Once your buckwheat galettes are ready, fill each one with your choice of ingredients while reheating in the pancake pan, then serve immediately. Enjoy!
