Quick Sardines Rillettes Recipe

Ingredients:

  • 2 tins of sardines (in olive oil), drained and central bones removed
  • 100g Fromage Frais or cream cheese
  • A small bunch of fresh chives, finely chopped
  • A pinch of black pepper
  • A touch of sea salt
  • Capers

Instructions:

  1. Prepare the sardines: In a small mixing bowl, crumble the sardines with a fork, removing the central bones.
  2. Mix the ingredients: Add the fromage frais, finely chopped chives, a bit of pepper, and just a hint of salt. Mix everything thoroughly with a spatula until the texture is smooth and well combined.
  3. Chill & serve: Place the rillettes in the fridge for a short chill, then serve as a spread with your favourite bread and topped with capers. Perfect for sharing!
