Traditionally, blanquette is made with veal (blanquette de veau), one of the great staples of French home cooking. In this version, the recipe is reimagined using tender French lamb (agneau), bringing a richer flavour while preserving the dish’s signature creamy character.
Made in the French Basque Country, this dish combines French lamb, white wine, carrots, cream and mushrooms, enriched with a touch of Espelette chilli pepper for a subtle warmth and depth of flavour.
Prepared by Ferme Elizaldia, a family-run farm known for its careful approach to animal rearing and regional recipes, this lamb blanquette is cooked slowly to achieve a tender texture and smooth, velvety sauce. The balance between the mild creaminess and the delicate Basque spice creates a dish that is both comforting and full of character.
