Sable de l’Abbaye is a buttery, crumbly biscuit, and is an iconic symbol of the heritage of Biscuiterie de l’Abbaye. Made with Isigny P.D.O. butter (made from the milk of cows in the Isigny terroir, as well as processed and prepared in Normandy), this biscuit has a crumbly texture with a pronounced buttery taste. The design on top of the sable represents the Abbey from the brand and distinguishes itself from other Biscuiterie de l’Abbaye products.

In 1941, a baker from Lonlay l’Abbaye, Georges Latour, created Norman sable biscuits. Its unique flavour gained regional acclaim, reaching the streets of Paris. The high demand prompted the founding of Biscuiterie de l’Abbaye in 1964, solidifying its iconic status in Lonlay l’Abbaye’s history.
