Maroilles PDO Cheese – Fauquet 210g 

Maroilles PDO (AOP in French) cheese comes from northern France, close to the Belgian border. This washed-rind cheese holds Protected Designation of Origin status. The Fauquet dairy produces this 210g format using pasteurised cow’s milk, following the regional rules that define Maroilles AOP cheese. 

The rind shows a deep orange colour and feels slightly moist. Inside, the paste is pale yellow, smooth and supple. As it matures, the texture becomes softer and creamier. The aroma is pronounced, while the flavour stays rounded, with savoury, milky notes and a gentle tang. 

Producers wash the rind in brine during maturation. This step supports the development of surface cultures and gives the cheese its colour and smell. The cheese matures for several weeks, allowing the centre to soften while keeping structure.
