Cake Sponge Mix for Light, Versatile Baking
Bring classic French baking into your kitchen with this genoise mix, a cake sponge mix designed for a range of cake baking projects. This French sponge cake base yields a light, airy texture with a gentle crumb that takes moist syrups and flavouring like vanilla beautifully, making it ideal for Victoria sponge, Swiss roll, layer cakes and more.
Made in France and based on the genoise approach (a whole-egg foam technique beloved in patisserie) this mix saves prep time without sacrificing structure or softness. It lets you achieve a well-risen, yellow sponge that absorbs moisture and flavour well, perfect for adding butter cream or ganache.

Recipes:
For a classic genoise sponge:
Mix 300g of the preparation with 3 eggs and 60g of water.
Beat until a smooth, even batter forms.
Bake at 180°C for 30 minutes.
For a sheet genoise (30 × 40 cm):
210g eggs + 45g water
Mix for 2 minutes at low speed, then 8 minutes at high speed.
Bake at 180°C for 20–25 minutes.
For a joconde sponge:
330g eggs + 90g ground almonds + 90g melted butter
Mix for 2 minutes at low speed, then 6 minutes at high speed.
Bake at 230°C for 5–7 minutes.
Ingredients: Sugar, WHEAT flour (GLUTEN), WHEAT starch, emulsifiers E472b-E477, raising agents E450-E500, glucose syrup, skimmed MILK powder, salt, colours E160b(ii)-E101.
