A unique specialty of the Lyon region, ‘pralines roses’ are almonds covered in pink caramelised sugar. Pink pralines form the base of many praline-based French desserts, such as ‘tarte aux pralines’ or ‘brioche aux pralines’, and of course, they can be eaten simply as they are – a classic French treat!

The origins of pink pralines are a little hazy, but many people believe the recipe was discovered in the home of the French Count of Plessis-Praslin (1598-1675) where it’s said that the Count’s chef found some of the children of the court roasting almonds dipped in sugar over an open fire. The chef appropriated the recipe, serving it to the Count and his guests who loved them, and over time the word Preslin evolved into Praline.
