Known in France as lisettes, these small Atlantic mackerel are prized for their delicate texture and mild flavour. Ferrigno prepares them in Port-Saint-Louis-du-Rhône, Provence, where the fish are steamed on racks and carefully handled by hand.

Packed in extra virgin olive oil with a touch of salt, they deliver a balanced flavour that works well as part of an aperitif spread, a seafood salad or a simple lunch. Their smaller size gives them a particularly tender bite while retaining the nutritional benefits associated with mackerel.
