These Ferrigno anchovy fillets are prepared with just three ingredients: Mediterranean anchovies, spring water and salt. Produced in Provence, they offer a lighter seafood option without added oil.

The anchovies retain a firm yet tender texture and a clean, savoury flavour. Spring water allows the natural taste of the fish to remain at the forefront, making them suitable for a variety of recipes.

Ferrigno hand-prepares the anchovies before steam cooking them on racks in its Provence workshop. Enjoy them in salads, sandwiches, aperitifs or Mediterranean-inspired dishes.
