These cured lardons come from a Basque country farm, using pork raised under Bayonne ham PGI standards. The pork belly is salted and dried for over a month, creating firm cubes that release flavour when cooked. The texture becomes crisp outside and soft inside, while the taste combines savoury notes with a hint of spice.
