Description
This nougat with pink pralines is made in Montelimar and closely linked to Lyon, the home of pink pralines. Diane de Poytiers prepares this nougat by slowly cooking sugar with honey and egg white, then blending in roasted almonds and crushed pink pralines.
The flavour is gently sweet and nut-forward. Almonds bring warmth and depth, while the pink pralines add a light crunch and notes of cooked sugar with a hint of vanilla. Each bite feels balanced and satisfying, without becoming overly sweet.
Pink pralines are almonds coated in cooked sugar with a bright pink colour. The finished pralines are left to crystallise, giving them their distinctive crunch. They are a speciality from Lyon and are widely used in French baking and confectionery. In this nougat, they add contrast in taste, texture and colour.
