Elizaldia’s version gives this classic dish a Basque twist, featuring Bayonne ham made from pigs raised on the Elizaldia farm under IGP standards, and a gentle touch of Espelette chilli pepper for subtle warmth.
This slow-cooked dish combines white beans, cabbage, potatoes, carrots, leeks, and turnips simmered in a rich, flavourful broth. The addition of Bayonne ham brings depth and a savoury note, while the Espelette pepper enhances the overall balance without overpowering the ingredients.
