Vacherin Mont d’Or is a celebrated soft cheese from the Franco-Swiss Jura, produced only during a specified time of the year. With a PDO-protected area label, it is made from thermised milk (milk heated briefly to around 62°C for 15 seconds to reduce bacteria while preserving the milk’s structure and flavour complexity). This process sits between raw and pasteurised milk, helping the cheese develop its signature smooth, silky texture.
Origin and Seasonality
Production runs from 15 August to 31 March, with cheeses available from September to April, reflecting its strong ties to local winter dairy rhythms in the Jura mountains. Each cheese is held within a band of spruce bark (épicéa) sourced from the same Franco-Swiss region, contributing to its characteristic aroma and shaping its form during ripening.
Texture and Flavour Profile
Vacherin Mont d’Or is known for its soft, lightly flowing paste, naturally ivory-yellow and exceptionally creamy. The flavour is mildly salty with low acidity, developing woody notes from contact with the spruce bark and the wooden box it matures in. The washed rind ranges from amber to reddish-brown and remains supple throughout ageing.
Perfect for Baking: renowned for its melting quality, Vacherin Mont d’Or is a favourite for oven-baked cheese dishes. Its creamy structure and naturally aromatic profile make it a highlight of cold-season meals.
- Use a fork to make a few small holes in the top of the Vacherin.
- Add a splash of white wine (if using) and tuck in 2–3 garlic cloves
- Wrap the box in foil.
- Bake in a preheated oven at 180°C for about 25 minutes, until gooey and golden.
- Serve warm with boiled potatoes, a charcuterie platter, and crunchy cornichons.
