The original recipe was discovered by accident in 1888 in the coastal town of Quimper, Brittany. Marie-Catherine Cornic, a local cook, unintentionally left one of her thin crêpes on the stove for too long. She folded and rolled the overcooked crêpe rather than discarding it, creating a surprisingly airy, crunchy bite. Delighted by the delicate layers and melt-in-the-mouth texture, she unknowingly gave birth to what would become the beloved Crêpe Dentelle. Over a century later, Gavottes has refined the production method, but the spirit of this happy accident remains unchanged.
