Confit is a classic French method of gently cooking and preserving meat in duck fat. Cooking chicken gizzards using this method means they become very tender, and the duck fat imparts a rich flavour. These gesiers have a unique, meaty taste that some say is similar to the dark meat of chicken, or a bit like unsalted bacon.

Confit is a speciality in Gascony (although cooking by means of preserving food in duck fat is said to date back to Roman times), where meat is cooked on a low heat for up to 10 hours and then stored in cans or jars to be consumed during the winter months.

You can slice and serve these gesiers cold, or pan fry to crisp them up and serve with soft boiled eggs and some salad leaves to make salade de gésiers, a classic dish from the South West of France.
