Seabass Rillettes with Raspberry and Timut Pepper

Produced by Le Père Eugène on the Brittany coast, these rillettes combine seabass with raspberry and Timut pepper. The result is a smooth seafood spread with fresh fruit notes and a delicate citrus finish.

Timut pepper originates from Nepal and is prized for its distinctive grapefruit-like aroma. Although called a pepper, it belongs to the same family as Sichuan pepper and adds bright citrus notes rather than intense heat.

Serve these fish rillettes chilled on toasted bread or blinis. They make an excellent addition to aperitif platters and seafood-inspired starters.
