Creamy French Beans for Lamb and Grilled Meats

These extra-fine flageolet beans have a soft, creamy texture and a mild, slightly nutty flavour. Popular in French cooking, these small pale-green beans make a well-known accompaniment to roast lamb and grilled meats.

“Extra fine” refers to the smaller calibre of the beans. They are harvested earlier, giving them a finer skin and a softer, more delicate texture than larger flageolet beans.

Ready to use, simply warm them slowly in a saucepan. Season with butter, garlic, parsley or thyme, or serve them with grilled sausages, duck and vegetable casseroles.
