Description
La Belle Chaurienne duck rillettes is a savoury French delicacy from the southwest of France.
The preparation begins with duck meat (53%) gently simmered in its own fat until tender enough to be shredded into fine fibres. The meat is then seasoned and slowly mixed with duck fat to create a spreadable, richly flavoured pâté. The result is a soft, melt-in-the-mouth texture and a deep, savoury taste that captures the essence of French potted meat.
Best served at room temperature, these duck rillettes pair beautifully with fresh baguette, cornichons and can also be included in a charcuterie board or picnic spread.
La Belle Chaurienne has been producing duck dishes in Castelnaudary since 1963, famous for their cassoulets and confit duck legs, their recipes highlight the natural flavour of locally sourced ingredients.
