This dressing is a great classic with oysters. Simply open the oysters, empty their water, add a few drops of this vinegar and enjoy.  You can also serve this “vinaigre a l’echalotte”  with fish like seabass or seafood. It is a flavoursome salad dressing and is excellent poured over steamed or boiled potatoes or green beans.
