These small capers punch far above their weight. The pickled flower bud of the caper bush (Capparis spinosa), capers are valued all over the Mediterranean for their distinctive sweet-sour flavour.

Capers are extremely easy to use. Just drain a few – you can rinse them if you want a milder taste – and serve them with smoked salmon or fresh fish. Chop and add them to salad dressing, a tartare sauce, mix them through roast vegetables or fold them through pasta sauce. Or just nibble them straight from the tin!
