A Basque Take on French Black Pudding 

This Elizaldia French black pudding comes from the Basque Country and blends pork, apple, and a touch of Espelette chilli pepper. Unlike classic black pudding sausages, this version is prepared as a soft terrine, making it easy to spread on bread or toast. The apple adds a gentle sweetness, while the mild chilli gives a warm lift. Made from pork meat raised on the Elizaldia farm, where pigs are reared under the IGP Bayonne ham label, ensuring strict breeding standards and quality meat.

The terrine has a creamy texture that spreads easily. It’s flavour is rich yet rounded, thanks to the blend of pork and apple. The Espelette pepper stays subtle and enhances the overall taste without adding strong heat. It works well on cold platters, sandwiches, or as part of a simple starter.
