Purple garlic 500g: 7 Garlic bulbs

This purple garlic is traditionally grown in the Haute Garonne region of Southwest France. The vent d’Autan, a warm and dry Mediterranean wind, gently breezes over and dries Ail violet de Cadours after it’s harvested.

Whilst outwardly vivid, this garlic actually has a very delicate and sweet flavour and is the oldest known type of garlic grown in France.

‘Ail Violet de Cadours’ has been recognised with AOP status, which means it’s a protected title, only permitted to be grown and harvested in a clearly defined area. You can cook with purple garlic in the same way you would white, but as it’s sweeter and milder, purple garlic also works well in dishes that require the addition of raw garlic.
