Description
This whole wheel French brie is produced by Fromagerie Renard Gillard (famous for brie de Meaux) in north-eastern France. Thermised cheese is made from milk heated at a lower temperature than pasteurisation. This gentler treatment keeps more of the milk’s natural enzymes and microflora, which helps develop deeper flavour and a more complex aroma during ripening. The texture also tends to ripen more evenly, offering a creamier mouthfeel while still meeting modern food safety standards.
After a 28 days minimum ripened maturation, the brie develops from the rind towards the centre. The texture stays creamy but not runny. The thin white rind encloses a pale interior that softens gradually over time.
On the palate, this Renard Gillard brie style offers a milky, slightly fruity profile with nutty notes. Subtle hints of butter, cream, and hazelnut appear as maturation progresses, with gentle savoury depth rather than sharpness.
