These dry, French Puy lentils are small, greenish-brown lentils cultivated in the Puy region of France. They have a slightly peppery flavour and a firm texture, holding their shape well when cooked. Sabarot’s Puy green lentils hold the AOP stamp which refers to the ‘Appellation d’Origine Protégée.’ This is a French label meaning ‘protected designation of origin.’ It is used for agricultural products produced in a specific area (terroir) using traditional methods.

These legumes can be prepared in diverse ways. The advantage of Puy lentils, compared to other legumes, is that no soaking is required. They are commonly used in soups, salads, and side dishes. To cook them, rinse the lentils, then simmer them in water or broth until tender, usually for about 20-30 minutes. You can enhance their flavour by adding herbs, garlic, onions, or vegetables while cooking. They are also great in cold salads with a vinaigrette dressing or mixed with roasted vegetables for a warm side dish.
