Fortwenger pain d’epices with pearl sugar is a soft, spiced gingerbread loaf cake made in Alsace, a region known for its pain d’épices and festive baking traditions. This version combines the gentle sweetness of honey with the depth of rye flour and warm spices, creating a balanced and aromatic gingerbread perfect for any occasion. 

The dough is prepared using rye flour, about 20% honey, and a blend of spices such as cinnamon and clove. It is then slowly baked to develop a moist, tender crumb and a lightly caramelised crust. Once cooled, the loaf is topped with crisp pearl sugar, adding a pleasant crunch and a delicate sweetness that enhances the cake’s spiced aroma. 

This gingerbread is often enjoyed sliced with tea, spread with butter or jam, or served alongside cheese. Its smooth texture and subtle honey flavour make it a versatile addition to both sweet and savoury pairings. 

Produced by Fortwenger, established in 1768 in Gertwiller, Alsace, this bakery continues to highlight the region’s expertise in honey-based cakes and biscuits through its careful preparation and respect for local ingredients. 

Ingredients: rye flour (GLUTEN), honey 20% (EU/ Non EU), cane sugar, glucose-fructose syrup, water, vegetable oils: rapeseed and sunflower, MILK, humectant: sorbitols, spices: cinnamon, ginger, coriander, anise, cloves, star anise, nutmeg, pepper, anise; raising agents: ammonium carbonates, sodium carbonates, calcium phosphates, natural flavour. 

May contain traces of NUTS, SOYA and EGGS.
