Also known as saucisse sèche, saucisson is one of the truly historic French delicacies, but there are plenty of regional and seasonal variations. You’ll find a number to try in our online shop.

Classic taste

The classic “plain” saucisson is made from seasoned pork and has a subtle, rounded taste that really blossoms on the tongue. Our pork saucisson comes from Lyon in east-central France: a region with a long tradition of top-class charcuterie.

Another fine sausage from Lyon is the Rosette au Jambon. This large rustic saucisson is matured for longer and has a particularly rich flavour, with minced pork, pork fat, spices and garlic.

Savoury and spicy

Sometimes you want a stronger taste, especially if you’re having saucisson as part of a charcuterie board. Garlic is a particular favourite, but French food lovers also adore piment d’Espelette, a mild, characteristic red pepper from the Basque region.

If you would like something a little different, why not try saucisson with ceps – the French term for porcini mushrooms. Or perhaps Roquefort saucisson, shot through with deliciously strong blue cheese.

 

 

Fruit and nut

One of our best-loved charcuterie products is the hazelnut saucisson. With a complex texture and satisfying, earthy flavour, we’re not surprised it’s a best-seller. You might also want to try the blueberry saucisson from the same producer, based just outside Lyon. The dried blueberries add a delightfully sweet and tart note to the mellow taste of the pork.

If you want to try out a few different flavours or you just love a bargain, our five 160g saucisson selections are an excellent choice. The selections include hazelnut, ceps, wild boar, Roquefort, Comté and black pepper varieties among others, so there really is something for everyone!

 

How to enjoy your saucisson

Saucisson is very easy to store, and to serve. You can store your whole saucisson in a cool, dry place, although the refrigerator is also good. Once you’ve cut into it, cover the cut end securely in clingfilm or greaseproof paper, store it in the fridge and finish it within a few days. 

Like a good French cheese, saucisson is best when you let it come up to room temperature before serving. That’s when the flavour really develops. You can slice your saucisson and enjoy it in a baguette spread with good French butter – add cornichons for a real French-style sandwich! Saucisson is also great on its own, or paired with a selection of French cheeses. Add a light-to-medium red wine like a Beaujolais or Pinot Noir, or even a few bubbles, et voilà! The perfect evening.
