The fourth chocolate

Callebaut’s greatest innovation was unveiled in 2017: ruby chocolate. This bright-pink, berry-scented chocolate might seem like a newfangled concoction, but it’s 100% natural. Ruby chocolate actually gets its colour and flavour from cocoa beans harvested in Brazil, Ecuador and the Ivory Coast. We don’t know much more than that, since its development is a closely guarded secret.

The vivid colour of ruby chocolate fades when heated, but it’s still a pretty pink addition to your cakes, biscuits, pastries and candy creations – with no need for food colouring! Ruby chocolate has a subtle taste and texture that’s more similar to white chocolate than to milk or dark, but its tangy flavour is completely unique.
