For over a century, Belgian chocolate producers Callebaut have been prized by bakers, confectioners and pâtissiers alike for their top-quality chocolate. In 1996, they acquired French cocoa producer Barry, adding rich and refined cocoa powders to their range.

The fourth chocolate

Callebaut’s greatest innovation was unveiled in 2017: ruby chocolate. This bright-pink, berry-scented chocolate might seem like a newfangled concoction, but it’s 100% natural. Ruby chocolate actually gets its colour and flavour from cocoa beans harvested in Brazil, Ecuador and the Ivory Coast. We don’t know much more than that, since its development is a closely guarded secret.

The vivid colour of ruby chocolate fades when heated, but it’s still a pretty pink addition to your cakes, biscuits, pastries and candy creations – with no need for food colouring! Ruby chocolate has a subtle taste and texture that’s more similar to white chocolate than to milk or dark, but its tangy flavour is completely unique. You can buy ruby chocolate chips (callets) in our online store in 250g, 500g and 2.5kg formats. We also sell callets in white, milk and dark varieties for all your baking and confectionary projects. With 22–24% cocoa fat content, this ultrafine, dark brown 100% cocoa powder mixes equally well with liquids and doughs. As the name suggests, it’s complex and fragrant, with a powerful chocolatey taste that will add depth and dimension to any cake, biscuit, candy or sauce. It’s also fine enough to use for dusting. If you’re looking for something really special, try Extra Brute. This deep-red 100% cocoa powder has a cocoa fat content of 22.5%. Ideal for baking, it’s also highly suitable for confectionery coverings, ice creams, mousses and sorbets, sauces, and hot chocolate. Its intense colour adds a striking coppery note to dusted chocolate truffles.
